The Riverchase shop in Hoover (1851 Montgomery Hwy Ste 107) is open: Sun–Thu: 11 AM–9 PM (orders until 8:40 PM) Fri–Sat: 11 AM–10 PM (orders until 9:40 PM) Online ordering stops 20 minutes before close. Holiday hours can change — check Toast or Instagram if something feels off.
The Uncle G's trailer at Hop City (2924 3rd Ave S, Birmingham) operates: Sunday: 12 PM–7 PM (orders until 6:40 PM) Mon–Thu: 4 PM–8 PM (orders until 7:40 PM) Friday: 4 PM–9 PM (orders until 8:40 PM) Saturday: 12 PM–9 PM (orders until 8:40 PM) Hop City Beer & Wine (the store next to us) keeps their own hours — we're just the pizza trailer in the parking lot, not the bottle shop.
Riverchase has two indoor tables — that's the whole seating situation. Most people grab and go. The Hop City trailer is outdoor pickup; eat on Hop City's patio, in your car, or wherever Birmingham zoning allows you to enjoy cheese. The mobile trailer has no seating unless you bring a camp chair and a bit of audacity.
No. We don't take table reservations. You can order ahead on Toast for a pickup time — that's as close to "reserving" as we get. If you need forty pies for Tuesday at noon, that's catering. Different form, different energy.
We are known for Detroit-style pan pizza — thick, crispy-edged squares with caramelized cheese. We also serve New York inspired round pies. Many guests call it "Squares & Rounds." Neither is a casserole. Please stop calling it that.

Use Order on this site to pick Riverchase, Hop City, or the mobile trailer — you will land on the correct Toast menu for that location. Pick the wrong spot and your pizza will not teleport. We checked.
The Riverchase shop in Hoover offers delivery through Toast — enter your address at online checkout to see live availability and fees. The Hop City and mobile trailers are set up for pickup. Feeding a group? Catering delivers up to 25 miles from Hoover, with distance-based fees from $10 to $60.
A different deal every day of the week — the current lineup lives on our Menu page. Riverchase honors the full list; the trailers honor what their tighter lineups allow. All specials are while supplies last.

Yes — the mobile trailer books private events, breweries, offices, schools, and neighborhood nights around the Birmingham metro. Fill out the food truck booking form with your date, headcount, and location, and we'll confirm availability.
Yes — whole pans, NY pies, sides, and group-friendly spreads. Start on our Catering page to order online or submit an inquiry for custom events. We cannot cater your cousin's destination wedding in Maui. Yet.
Detroit pans are baked in oiled pans with a frico cheese edge and a chewy interior. NY pies are large thin-ish rounds built for classic slice vibes. Both are made with the same Uncle G's care. One folds. One squares. Choose your fighter.

Nope. Deep dish is a tall, fork-and-knife Chicago build with the sauce inside a pastry-like crust. Detroit-style is a square pan pizza — airy, open crumb, crispy fried bottom, and a caramelized frico cheese edge. Full comparison on our Detroit-style pizza guide. Next question.
Skip the microwave — it steams the crust sad. Reheat squares in a 375–425°F oven or air fryer for a few minutes until the cheese wakes back up, or re-crisp the bottom in a dry skillet over medium heat. The frico edge comes back beautifully.
Service animals welcome. Regular dogs should stay home unless they can carry their own pizza box and tip. If by dog you mean your homie, absolutely, bring all your dogs!
Very edible. That is the point. If you leave it on the plate we will assume you are not feeling well.
